Background on Fitzbillies
Fitzbillies is a 100 year old artisan bakery in central Cambridge. We make a huge range of baked goods: the Chelsea buns we’re most famous for; sourdough and yeasted breads, viennoisserie, celebration cakes, brownies and macarons. These are sold through our own shop and cafés, our wholesale business supplying local farm shops, restaurants and Cambridge colleges, and online. Our business has grown hugely over the past 10 years as we’ve combined the best of Fitzbillies traditions with modern artisan baking. We’re equally popular with our very discerning local customers and with visitors to Cambridge.
Job Outline:
This role is for a baker to join the team at our bakery unit on Clifton Road, Cambridge. Ideally we are looking for someone with experience in sourdough bread and yeasted baking, with good hand shaping skills.
We would also be happy to train someone with less experience, or who is looking for a career change into baking.
Hand-baked artisan bread and cakes, made with care and attention to detail.

This role is based in our main branch of Fitzbillies at Trumpington Street in Cambridge and
you’ll work alongside the Head Chef & Operations Manager in running the business
effectively and efficiently.
As the business gets increasingly busier and grows, we need someone with great
organisational, team management and high-volume hospitality experience.

Job Outline:
A member of the senior team running Fitzbillies Trumpington Street alongside Operations
Manager and Head Chef, reporting to the Operations Director of Fitzbillies Group.
Responsible for day-to-day efficient running of our main branch. Setting standards for
customer experience and building a strong & dependable team. Overseeing the health &
safety, food safety and other standards of the branch.
What you will do
Setting standards and tone of service that is consistent across all shifts and every day.
• Improving flow of service and increase speed, quality & consistency of service.
• Develop proactive approach to recruiting, developing, and retaining key staff.
• Having a organised approach to HR – inductions for new team members, probation
reviews, training reviews & performance management.
• Improving our margins by co-operating with the Head Chef & Operations Manager on
wastage tracking, stock control and effective ordering.
• Reviewing and managing of forecasts & budgets set by the Operations Director.
• Maintaining a financial overview of the branch performance.
• Being the branch expert on Health & Safety, Food Safety and other relevant legislation and
guidance
• Tackle problems before they escalate

About You

Remuneration & Hours
From £29,000 - £35,000.
Performance bonus up to 2,000 per year.
Tips.
Full time – 45 hours a week over 5 days, including weekends.
No late evenings or split shifts.
Example shifts – 7am-4pm, 8am-5pm, 9am-5pm or 10am-7pm.

We are looking for speciality barista for our coffee shops across both Trumpington Street and Bridge Street. Working with Caravan coffee, we provide regular training including going to the roastery based in North London, where they have a fully equipped Coffee School that run Barista training courses covering everything from basics to advanced milk skills to preventative maintenance.
Ideal candidates will have at least one years’ experience in a fast-paced speciality coffee shop environment, speciality barista producting latte art, espresso based coffee.

Brewing special in-house recipes of cold brew and iced tea.
Serving on either of our counters, providing excellent customer service using companies service standards.
Keeping up to date health & safety records. Working with management to create and deliver delicious tasting coffee that looks great, in an effective and timely manner.

Trainees will have the opportunity to experience all areas of the business and then to specialise in one of three main areas:- Artisan Bakery- Professional Cookery- Barista & Front of House.
The Traineeship lasts for 12 months and it is anticipated that at the end of that time permanent positions will be offered to trainees meeting the required standard.
The Trainees will spend time at our 3 locations: Fitzbillies Trumpington Street, Fitzbillies Bridge Street & Fitzbillies Artisan Bakery, 31B&C Clifton Road.
At the end of the traineeship all trainees will have gained a broad understanding of how a bakery and hospitality business works as well as deep skills in their chosen area. We are offering 5 traineeships this autumn, with the expectation that 2 will specialise in Artisan Bakery, 2 in Barista & Front of House skills and 1 in Professional Cookery.
The programme start date is Monday 31 October 2022 (with the opportunity to start work at Fitzbillies sooner if you wish).
